"Easy and good cut out cookies."

Step 1

Preheat oven to 325 degrees F.

Step 2

In the bowl of an electric mixer beat the butter and brown sugar together until light and fluffy.

Step 3

Stir in vanilla.

Step 4

Stir in the flour and salt and blend well.

Step 5

On a lightly floured work surface roll out dough to 1/4 inch thick.

Step 6

Cut out cookies with a 3 inch shamrock cookie cutter and place them 2 inches apart on uncreased cookie sheets. Reroll scrapes and cut out more cookies.

Step 7

Sprinkle green sugar crystals on each cookie.

Step 8

Bake for 20-25 minutes or until cookies are pale golden and not brown (YOU NEED TO WATCH THESE CAREFULLY AS THEY BROWN FAST)

Step 9

Let stand for 2 minutes before removing them to a rack to cool completely.

We really liked these cookies. The flavor was really good. So easy to mix up and bake. For us 20 minutes too much. Our cookies turned out too brown. I am going to make another batch and take them out sooner.

These beauties are reminiscent of short bread. Fast and easy to make. I made them into smallish balls and pressed them with a fork (like peanut butter cookies). They took 20 minutes to bake and the bottoms were perfectly light brown. Did not have green sugar crystals. This is a keeper!! Thank you for sharing Ellie! Made for Billboard Recipe Tag.
