Step by Step Method
Step 1
Preheat oven to 325 degrees F.
Step 2
In the bowl of an electric mixer beat the butter and brown sugar together until light and fluffy.
Step 3
Stir in vanilla.
Step 4
Stir in the flour and salt and blend well.
Step 5
On a lightly floured work surface roll out dough to 1/4 inch thick.
Step 6
Cut out cookies with a 3 inch shamrock cookie cutter and place them 2 inches apart on uncreased cookie sheets. Reroll scrapes and cut out more cookies.
Step 7
Sprinkle green sugar crystals on each cookie.
Step 8
Bake for 20-25 minutes or until cookies are pale golden and not brown (YOU NEED TO WATCH THESE CAREFULLY AS THEY BROWN FAST)
Step 9
Let stand for 2 minutes before removing them to a rack to cool completely.
