Step 1: Preheat oven to 325 degrees F.
Step 2: In the bowl of an electric mixer beat the butter and brown sugar together until light and fluffy.
Step 3: Stir in vanilla.
Step 4: Stir in the flour and salt and blend well.
Step 5: On a lightly floured work surface roll out dough to 1/4 inch thick.
Step 6: Cut out cookies with a 3 inch shamrock cookie cutter and place them 2 inches apart on uncreased cookie sheets. Reroll scrapes and cut out more cookies.
Step 7: Sprinkle green sugar crystals on each cookie.
Step 8: Bake for 20-25 minutes or until cookies are pale golden and not brown (YOU NEED TO WATCH THESE CAREFULLY AS THEY BROWN FAST)
Step 9: Let stand for 2 minutes before removing them to a rack to cool completely.
