Step by Step Method

Step 1

Fill a large pot with water

Step 2

Bring to a boil.

Step 3

Cook the asparagus and green beans for 5 minutes.

Step 4

Remove with a slotted spoon and drop into ice water.

Step 5

Remove when cold,and set aside.

Step 6

Combine the oils and the lemon juice in a small bowl to make vinaigrette.

Step 7

Mix well and season with freshly ground black pepper.

Step 8

Dry the cooked vegetables on paper towels.

Step 9

Combine the vegetables in the salad bowl.

Step 10

Pour vinaigrette over the beans and asparagus.

Step 11

Toss gently to coat.

It's spring in Australia so asparagus (my very favourite vegetable) and green beans are in abundant supply. I made a half batch for the two of us, following the ingredients and instructions. It was always going to be a winner—sesame oil is another favourite. Served with corn and scallops.
