Step by Step Method

MAKE THE SALMON


Step 1

Slice the salmon into 16 equal pieces and season lightly with salt and pepper. Heat 1 teaspoon of the oil in a medium saute pan over high heat. Add half the salmon pieces and sear for 10 seconds or so on each side (cooking time depends on the thickness). Add the remaining 1 teaspoon oil and repeat with the rest of the salon. Set aside.

MAKE THE JALAPENO DRESSING


Step 2

In a food processor, combine the vinegar, chile, garlic, and salt and puree until smooth. With the motor running, slowly add the oil through the feed tube and process until thickened.

Step 3

Place a small amount of salad greens on each of 4 serving plates. Top with the 4 pieces of salmon and drizzle with the dressing.
