Ingredients

The ingredients are:
  • 8 ounces salmon (preferably sashimi-grade salmon)
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 teaspoons olive oil
  • JALAPENO DRESSING
  • 1/4 cup rice vinegar
  • 1 jalapeno chile, finely chopped
  • 1/2 teaspoon garlic, finely grated
  • 1/2 teaspoon salt, or to taste
  • 5 tablespoons neutral oil (such as a light olive oil)
  • Mixed salad greens (enough to place a small amount on 4 serving plates)

How to Make

  • MAKE THE SALMON

  • Step 1: Slice the salmon into 16 equal pieces and season lightly with salt and pepper. Heat 1 teaspoon of the oil in a medium saute pan over high heat. Add half the salmon pieces and sear for 10 seconds or so on each side (cooking time depends on the thickness). Add the remaining 1 teaspoon oil and repeat with the rest of the salon. Set aside.

  • MAKE THE JALAPENO DRESSING

  • Step 2: In a food processor, combine the vinegar, chile, garlic, and salt and puree until smooth. With the motor running, slowly add the oil through the feed tube and process until thickened.

  • Step 3: Place a small amount of salad greens on each of 4 serving plates. Top with the 4 pieces of salmon and drizzle with the dressing.
