"This is a great recipe I make quite often when the lobster is abundant. It is low fat because I use Carnation® Fat Free Evaporated Skim Milk. You could of course use 1/2 and 1/2 if you prefer it creamier. "

Step by Step Method

Step 1

Drizzle a large heavy bottomed pot with olive oil and bring to medium-high heat.

Step 2

Add chopped onion and garlic and cook until onions are translucent, about 2 minutes.

Step 3

Pour in the fish stock and add the fish cubes, potatoes, corn, bay leaf, chives, dried oregano and pepper.

Step 4

Bring to a boil over medium-high heat reduce heat and simmer until potatoes are just tender.

Step 5

Add the cooked lobster, clams and their juices and cook until heated through.

Step 6

Pour in the evaporated milk and heat through.

Step 7

Remove bay leaf and ladle into bowls.
