Step 1: Drizzle a large heavy bottomed pot with olive oil and bring to medium-high heat.
Step 2: Add chopped onion and garlic and cook until onions are translucent, about 2 minutes.
Step 3: Pour in the fish stock and add the fish cubes, potatoes, corn, bay leaf, chives, dried oregano and pepper.
Step 4: Bring to a boil over medium-high heat reduce heat and simmer until potatoes are just tender.
Step 5: Add the cooked lobster, clams and their juices and cook until heated through.
Step 6: Pour in the evaporated milk and heat through.
Step 7: Remove bay leaf and ladle into bowls.
