"I love horseradish! And, this is something I make often; because it is great in so many recipes. I use it on grilled steaks, chicken, fish, and vegetables; also, my favorite, is to saute scallops. I have a scallop recipe here on RecipeZazz - 'Horseradish Scallops over Wilted Spinach with Roasted Tomatoes', that uses this butter recipe. This happens to be a old 'Southern Living' recipe that I have been using for years. However, some times I change it up. Parsley and thyme are both equally as good; and orange vs lemon is also delicious, especially with thyme."

Step by Step Method

Step 1

Butter ... Add everything to a food processor and pulse several times, until combined. Place the butter mixture on a sheet of parchment paper, wax paper, or saran wrap; and, wrap around the butter, to form a log. I prefer to use saran wrap. It's a bit easier to form a log. Then refrigerate until firm. I prefer to refrigerate over night if possible.

Step 2

I actually freeze mine. Just remove, slice, and use as needed. I actually put my wrapped butter in a small freezer baggie or ziploc bag; it prevents freezer burn.

Step 3

Serve ... As mentioned - you can slice the butter, and use as a condiment - to top steaks, chicken, fish, or vegetables; or use to saute scallops or shrimp. Another favorite, is to top baked potatoes. ENJOY!

This was perfect on Sea Scallops. I cut the recipe back to use on two servings and it was no problem. I can see using this on any seafood or poultry. Easy to put together and a real gem
