Step by Step Method
Step 1
Base ... In a saute pan (I love non stick for this) on medium-high heat, add the olive oil, onion, and red pepper flakes, cook 1-2 minutes. Then, add in the garlic, pinch of both salt and pepper and reduce to medium heat and cook another 1-2 minutes.
Step 2
Beans and Spinach ... Then add in the beans, thyme, a little of the broth (maybe 1/4 cup), simmer 3-4 minutes. Next, add in the spinach, breaking it up as you add it; and a bit more broth (1/8-1/4 cup) and simmer another 3-5 minutes until the liquid reduces and everything is combined.
Step 3
Finish ... Add any additional seasoning, and finish with fresh basil. ENJOY!
