Ingredients

The ingredients are:
  • 2 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (7-8 ounce) box frozen spinach, thawed and squeezed dry
  • 1 medium onion, diced fine
  • 2 tablespoons garlic, minced
  • 1/3 to 1/2 cup chicken broth (approximately)
  • 2 teaspoons fresh basil, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon (pinch) red pepper flakes
  • Salt and pepper to taste
  • 2 teaspoons olive oil

How to Make

  • Step 1: Base ... In a saute pan (I love non stick for this) on medium-high heat, add the olive oil, onion, and red pepper flakes, cook 1-2 minutes. Then, add in the garlic, pinch of both salt and pepper and reduce to medium heat and cook another 1-2 minutes.

  • Step 2: Beans and Spinach ... Then add in the beans, thyme, a little of the broth (maybe 1/4 cup), simmer 3-4 minutes. Next, add in the spinach, breaking it up as you add it; and a bit more broth (1/8-1/4 cup) and simmer another 3-5 minutes until the liquid reduces and everything is combined.

  • Step 3: Finish ... Add any additional seasoning, and finish with fresh basil. ENJOY!
