"Potato bread is perfect to use for these tasty stuffing bites. Kids and adults love them at the Thanksgiving or Christmas dinner table, but you can have them any time the mood strikes. Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Lightly grease a large baking sheet. Set aside.

Step 3

In a large skillet brown sausage until just cooked through, breaking it up into pieces as it cooks. Transfer to a large bowl, and set aside.

Step 4

In the same pan, add butter and cook until melted.

Step 5

Add onion and celery and saute until just translucent, 6-7 minutes.

Step 6

Add sage and sprinkle with salt and pepper.

Step 7

Pour the onion mixture over the sausage.

Step 8

Add bread cubes and stir.

Step 9

Stir in the beaten eggs, then add the stock to moisten.

Step 10

Form into 2 inch balls, and set on the baking sheet.

Step 11

Bake for 30 minutes, or until golden brown.

Step 12

Serve warm.

These don't take too long to make and it was something different to make with my turkey we had with company last week. My company raved about the dinner, so I am adding these to be made when I make turkey. Just as good as stuffing any day!
