Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease a large baking sheet. Set aside.
Step 3: In a large skillet brown sausage until just cooked through, breaking it up into pieces as it cooks. Transfer to a large bowl, and set aside.
Step 4: In the same pan, add butter and cook until melted.
Step 5: Add onion and celery and saute until just translucent, 6-7 minutes.
Step 6: Add sage and sprinkle with salt and pepper.
Step 7: Pour the onion mixture over the sausage.
Step 8: Add bread cubes and stir.
Step 9: Stir in the beaten eggs, then add the stock to moisten.
Step 10: Form into 2 inch balls, and set on the baking sheet.
Step 11: Bake for 30 minutes, or until golden brown.
Step 12: Serve warm.
