Ingredients

The ingredients are:
  • 12 ounces pork sausage (uncooked, I use Jimmy Dean Original in the tube)
  • 2 tablespoons butter
  • 1 large yellow onion, chopped
  • 3 celery stalks, chopped
  • 1 teaspoon dried whole sage leaves, crushed
  • Salt and pepper
  • 8 cups bread, cubed (cut into 1/2-inch cubes (I use potato bread, but any kind will do)
  • 2 large eggs, beaten
  • 1/2 cup low-sodium chicken stock

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Lightly grease a large baking sheet. Set aside.

  • Step 3: In a large skillet brown sausage until just cooked through, breaking it up into pieces as it cooks. Transfer to a large bowl, and set aside.

  • Step 4: In the same pan, add butter and cook until melted.

  • Step 5: Add onion and celery and saute until just translucent, 6-7 minutes.

  • Step 6: Add sage and sprinkle with salt and pepper.

  • Step 7: Pour the onion mixture over the sausage.

  • Step 8: Add bread cubes and stir.

  • Step 9: Stir in the beaten eggs, then add the stock to moisten.

  • Step 10: Form into 2 inch balls, and set on the baking sheet.

  • Step 11: Bake for 30 minutes, or until golden brown.

  • Step 12: Serve warm.
