Step by Step Method

Step 1

Get out a large saucepan and melt the butter in it.

Step 2

Add the flour and stir until it is smooth. Add the water and bring to a boil. Cook until it's thickened. Add the chili powder and garlic salt and bring to a boil again. Reduce the heat and simmer uncovered for 10 minutes.

Step 3

Get out a large skillet and place it on the stove over medium heat.

Step 4

Put in the beef, sausage, and onion. Cook until the meat is no longer pink. Drain. Next put in the beans and stir them in, heating all the way through.

Step 5

Grease a 9 X 13 baking dish. Spread in 1/4 cup sauce mixture.

Step 6

Add one tablespoon of the sauce mixture in the center of each tortilla and spread it around the tortilla. Add 2/3 cup of the meat mixture down the center of each tortilla. Add 1/4 cup of shredded cheese to each tortilla.

Step 7

Next, roll each tortilla up and place them seam side down in the baking dish.

Step 8

Pour the remaining sauce over the top of them. Sprinkle the remaining cheese over the top of everything.

Step 9

Bake uncovered for 18 to 22 minutes. It should be bubbly and the cheese should be melted.

  • For a spicier dish, increase the amount of chili powder used.

  • Ground turkey instead of ground beef: This substitution is beneficial for those who are looking for a leaner, healthier option. Ground turkey is lower in fat and calories than ground beef, so it can be a great way to reduce the fat content of this dish.
  • Corn tortillas instead of flour tortillas: This substitution is beneficial for those who are looking for a gluten-free option. Corn tortillas are naturally gluten-free, so they are a great way to make this dish suitable for those with gluten sensitivities or allergies.

Vegetarian Enchiritos Replace the beef and sausage with 2 cups cooked black beans and 1 cup cooked corn. Replace the refried beans with vegetarian refried beans. Heat the beans and corn in a skillet, stirring until heated through. Proceed with the recipe as directed.

Mexican Rice: This delicious side dish is the perfect accompaniment to the Sausage Enchiritos. It's a simple combination of cooked rice, onion, garlic, and tomatoes, flavored with cumin and chili powder. It adds a burst of flavor to the meal and is a great way to make the dish even more filling.

Refried Beans: Refried beans are a classic Mexican side dish that pairs perfectly with the Sausage Enchiritos. They are a creamy, savory dish made from cooked pinto beans, onion, garlic, and spices. The beans provide a great source of protein and fiber, and the flavor complements the spicy enchiritos perfectly.
