"I love to make into balls, and freeze so I only make what I want when I want at a moments notice. this is recipe found but I converted to Gluten=Free You can either use 4 ounces unsweetened chocolate squares or 12 Tablespoons Cocoa and 4 Tablespoons butter for those chocolate squares"

Step by Step Method

Step 1

In a large heavy saucepan melt chocolate and butter over low heat stir constantly remove from heat. or Melt both butters. remove from heat, stir in cocoa. Cool slightly.

Beat in sugar, Add eggs one at a time beat well after each

Stir in vanilla.

Step 4

Mix flour, xantham gum, baking powder and salt. Stir into mixture. FOld in nuts, Chill for 30 minutes.

Step 5

Shape dough into 1-inch balls. Roll in powdered sugar. at this point you can put on cookie sheets and freeze then put in freezer bag or Bake on ungreased baking sheet

Step 6

Bake 300 * for 18-20 minutes. Remove from sheets to wire racks. Cool

Step 7

Store airtight
