Ingredients

The ingredients are:
  • 4 unsweetened chocolate squares
  • 1/4 cup butter
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free flour
  • 1/2 teaspoon xantham gum
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2.2 ounces chopped pecans (1/2 cup, or other nuts)
  • Powdered sugar

How to Make

  • Step 1: In a large heavy saucepan melt chocolate and butter over low heat stir constantly remove from heat. or Melt both butters. remove from heat, stir in cocoa. Cool slightly.

  • Step 2: Beat in sugar, Add eggs one at a time beat well after each

  • Step 3: Stir in vanilla.

  • Step 4: Mix flour, xantham gum, baking powder and salt. Stir into mixture. FOld in nuts, Chill for 30 minutes.

  • Step 5: Shape dough into 1-inch balls. Roll in powdered sugar. at this point you can put on cookie sheets and freeze then put in freezer bag or Bake on ungreased baking sheet

  • Step 6: Bake 300 * for 18-20 minutes. Remove from sheets to wire racks. Cool

  • Step 7: Store airtight
