Saskatoon Slice Squares (Blueberries )
"This Saskatoon Slice wowed the crowd at this years school reunion, the recipe graciously shared. An incredibly delicious slice that not only wowed the crowd but has wowed everyone I've served it to. I haven't made it with blueberries, but did go with some apples from my backyard garden which also impresses. Seems School Reunions are a great place to find great recipes!"

Step by Step Method
Step 1
Base, whisk together flour, baking powder, salt, add in butter. Mix well
Step 2
Moisten with cream, roll out to the size of a greased 9 x 11 greased pan.(base should be fairly thin, about 1/3 inch)
Step 3
FILLING, combine Saskatoons, sugar, minute tapioca, lemon juice in a cooking pot. Cook over low heat stirring occasionally until sugar is dissolved
Step 4
Increase heat slightly, being careful not to break up the fruit and stirring only enough to prevent burning
Step 5
Bring to a gentle boil, cook 3 - 5 minutes, add a dash of cinnamon. Cool slightly
Step 6
To make crumb topping - place butter, sugar and flour in mixing bowl mixing together to form crumbs
Step 7
Add the cooled Saskatoon filling over crust, top with crumb mix. Bake at 350 for 20 to 30 minutes or until bottom is browned.
