Ingredients

The ingredients are:
  • Base:
  • 1/2 cup butter
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cup cream
  • Filling:
  • 5 cups saskatoons
  • 3/4 cups sugar
  • 2 tablespoons minute tapioca
  • 1 tabalespoon lemon juice
  • Dash cinnamon
  • Crumb Topping:
  • 1/2 cups butter
  • 1/2 cup sugar
  • 1 cup all purpose flour

How to Make

  • Step 1: Base, whisk together flour, baking powder, salt, add in butter. Mix well

  • Step 2: Moisten with cream, roll out to the size of a greased 9 x 11 greased pan.(base should be fairly thin, about 1/3 inch)

  • Step 3: FILLING, combine Saskatoons, sugar, minute tapioca, lemon juice in a cooking pot. Cook over low heat stirring occasionally until sugar is dissolved

  • Step 4: Increase heat slightly, being careful not to break up the fruit and stirring only enough to prevent burning

  • Step 5: Bring to a gentle boil, cook 3 - 5 minutes, add a dash of cinnamon. Cool slightly

  • Step 6: To make crumb topping - place butter, sugar and flour in mixing bowl mixing together to form crumbs

  • Step 7: Add the cooled Saskatoon filling over crust, top with crumb mix. Bake at 350 for 20 to 30 minutes or until bottom is browned.
