Step by Step Method
Step 1
Preheat oven to 400 degrees F (200 degrees C, Gas 6).
Step 2
Seed and score peppers and then cut them into strips (about 12 strips for each pepper).
Step 3
Place the peppers and the next 4 ingredients (-olives) in baking dish.
Step 4
Sprinkle the sugar over all and then pour in the sherry and season to taste; cover with foil and bake for 45 minutes. Remove foil from dish and stir.
Step 5
Add rosemary sprigs and drizzle with olive oil.
Step 6
Return o oven and bake for 30 more minutes or until vegetables are tender.
