Ingredients

The ingredients are:
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 red onion, sliced
  • 2 garlic cloves, halved
  • 6 plum tomatoes, quartered (or use 4 beefsteak tomatoes, cut into wedges)
  • 1/2 cup black olives (this is about 50 grams or 1 ounce of olives)
  • 1 teaspoon brown sugar (5ml)
  • 3 tablespoons sherry
  • 3-4 rosemary sprigs
  • 2 tablespoon olive oil (30 ml)
  • Salt
  • Pepper

How to Make

  • Step 1: Preheat oven to 400 degrees F (200 degrees C, Gas 6).

  • Step 2: Seed and score peppers and then cut them into strips (about 12 strips for each pepper).

  • Step 3: Place the peppers and the next 4 ingredients (-olives) in baking dish.

  • Step 4: Sprinkle the sugar over all and then pour in the sherry and season to taste; cover with foil and bake for 45 minutes. Remove foil from dish and stir.

  • Step 5: Add rosemary sprigs and drizzle with olive oil.

  • Step 6: Return o oven and bake for 30 more minutes or until vegetables are tender.
