Step by Step Method
Step 1
Preheat oven to 375F.
Step 2
Butter large, shallow, ovenproof casserole. Add potatoes; season generously with salt and pepper.
Step 3
Melt butter and oil in small saucepan over low heat. Add lemon juice.
Step 4
Pour butter mixture over potatoes.
Step 5
Sprinkle with thyme and toss.
Step 6
Bake 1 hour.
Step 7
Add lemon peel and toss, coating potatoes. Continue baking until potatoes are tender and browned, about 15 minutes.
Step 8
Sprinkle potatoes with parsley and serve.
