  • 1/4 cup butter
  • 1/4 cup olive oil
  • 6 tablespoons lemon juice
  • 2 teaspoons dried thyme
  • 1 tablespoon grated lemon rind
  • 3 tablespoons minced fresh parsley

How to Make

  • Step 1: Preheat oven to 375F.

  • Step 2: Butter large, shallow, ovenproof casserole. Add potatoes; season generously with salt and pepper.

  • Step 3: Melt butter and oil in small saucepan over low heat. Add lemon juice.

  • Step 4: Pour butter mixture over potatoes.

  • Step 5: Sprinkle with thyme and toss.

  • Step 6: Bake 1 hour.

  • Step 7: Add lemon peel and toss, coating potatoes. Continue baking until potatoes are tender and browned, about 15 minutes.
