Step 1: Preheat oven to 375F.
Step 2: Butter large, shallow, ovenproof casserole. Add potatoes; season generously with salt and pepper.
Step 3: Melt butter and oil in small saucepan over low heat. Add lemon juice.
Step 4: Pour butter mixture over potatoes.
Step 5: Sprinkle with thyme and toss.
Step 6: Bake 1 hour.
Step 7: Add lemon peel and toss, coating potatoes. Continue baking until potatoes are tender and browned, about 15 minutes.
Step 8: Sprinkle potatoes with parsley and serve.
