Step by Step Method

Step 1

Preheat the oven to 200°C

Step 2

Trim the carrot tops, leaving 1-2cm of stem on each carrot; peel the carrots and slice any larger carrots in half lengthwise so that they will be roughly the same size

Step 3

Place the carrots in a large baking dish, and toss with the olive oil, honey, garlic and sage; season with salt and pepper

Step 4

Transfer the carrots to the oven for 25-30 minutes or until they have caramelized.

Step 5

Remove from the oven, and toss the carrots through the butter.

Step 6

Transfer to a serving plate and serve hot.

Yummy roasted carrots. I especially loved the honey addition. I used baby carrots and cooked them alongside a baked chicken recipe. This will be a repeated recipe. Thank you!

So good! I almost eat them all out of the pan. They barely made it to the plate. I used coriander honey; got it at the market last weekend. Very nice.
