Step 1: Preheat the oven to 200°C
Step 2: Trim the carrot tops, leaving 1-2cm of stem on each carrot; peel the carrots and slice any larger carrots in half lengthwise so that they will be roughly the same size
Step 3: Place the carrots in a large baking dish, and toss with the olive oil, honey, garlic and sage; season with salt and pepper
Step 4: Transfer the carrots to the oven for 25-30 minutes or until they have caramelized.
Step 5: Remove from the oven, and toss the carrots through the butter.
Step 6: Transfer to a serving plate and serve hot.
