Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Peel outer layers of garlic and slice the entire head in half lengthwise. Place the halves of garlic cut side up on a sheet of aluminum foil. Pour the olive oil across the cloves and completely wrap the foil around the garlic. Bake for 35-40 minutes or until fragrant.

Step 3

While the garlic is roasting quarter turnips and put into a pot with enough water to cover. Place lid on pot and bring to a boil until fork tender, about 25 minutes.

Step 4

Using a slotted spoon remove turnips and transfer to a food processor or blender. Add the roasted garlic and carefully process until smooth. Pour olive oil in while turnips and garlic are blending and season with salt and crushed black pepper to taste.

Step 5

Serve hot and enjoy!

I love the garlic with turnip. I used the white turnip but the recipe will have added flavour using the heavier flavoured yellow turnip. I pureed the roasted garlic and mashed the turnips with a potato masher, then mixed the two. I put the prepared recipe in an oven proof and heated it just before serving. Delicious and will be made again. The next time with the yellow turnip.

We love turnips so this was highly rated. I opted to hand mash the turnips rather than machine puree so my batch was chunkier and I didn't use all of the oil. The results were yum!
