Step by Step Method
Step 1
If using fresh okra soak for 30 minutes in cold water with lemon juice, drain (that way it is not slimy)
Step 2
In a large pot over low heat ad the oil and then add the bacon, ham and next 3 ingredients (-bell pepper) and cook for 8-10 minutes or until tender. Stir in tomatoes and next ingredients (-pepper) and cook for 10 minutes.
Step 3
Stir in rice, water, saffron and the drained okra (or frozen, thawed okra) and cook uncovered over medium heat for 15-20 minutes or until most of the water has been absorbed. Stir with fork, cover and simmer over low heat for another 15-20 minutes or until rice is tender.
