  • The following recipe serves 4-6 people.

Ingredients

The ingredients are:
  • 1/2 pound okra, washed, trimmed and cut into 1/2 inch slices (or use 10 ounce frozen okra, thawed and rinsed)
  • 3 cups cold water
  • 1 lemon, juice only
  • 3 tablespoons olive oil
  • 1/2 cup bacon, diced
  • 1 cup ham, cut into 1/4 inch dice
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 cup canned tomatoes, drained and chopped (or use canned tomato sauce)
  • 1/3 cup pimentos, drained and chopped
  • 1/2 cup dry sherry
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups raw converted rice
  • 4 1/2 cups water
  • 1/2 teaspoon saffron, powdered or 6-8 saffron threads, crushed

How to Make

  • Step 1: If using fresh okra soak for 30 minutes in cold water with lemon juice, drain (that way it is not slimy)

  • Step 2: In a large pot over low heat ad the oil and then add the bacon, ham and next 3 ingredients (-bell pepper) and cook for 8-10 minutes or until tender. Stir in tomatoes and next ingredients (-pepper) and cook for 10 minutes.

  • Step 3: Stir in rice, water, saffron and the drained okra (or frozen, thawed okra) and cook uncovered over medium heat for 15-20 minutes or until most of the water has been absorbed. Stir with fork, cover and simmer over low heat for another 15-20 minutes or until rice is tender.
