Step 1

Cut potatoes (do not peel) in 1/4 and simmer in water in large pot till tender, then drain and set aside.

Step 2

In the same pot, melt 1 tablespoon butter, add onions and saute' till soft.

Step 3

Mash flour with the rest of the butter, then add to pot, mix in the broth, stirring till it thickens (add about 1-2 more tablespoons of the flour if desired) mixture will not be very thick.

Step 4

Mashed the potatoes until smooth, leaving some chunks.

Step 5

Add to broth with chopped chicken. Stir till well mixed and simmer 20 minutes. Add sour cream, 1/2 & 1/2 and seasonings.

Step 6

Simmer till heated. Before serving stir in grated cheese.

Delicious! We loved this potato soup....first one we've had with chicken. I roasted a chicken breast and seasoned it with greek seasoning before adding. Great flavor. Thanks for sharing! Made for FYC tag game.

Tell your daughter's MIL thanks. This is so easy and very hearty and filling. I stirred in the cheese as called for and also garnished with some. This would be good without the chicken, too, if you wanted a meatless meal. Will be putting this in the rotation for sure.
