Step by Step Method

Step 1

In a soup pot

Step 2

Melt butter over medium heat.

Step 3

Add onion, celery, leeks and garlic and saute for 3 minutes mixing often.

Step 4

Remove from the heat and add the flour, mixing well.

Step 5

Add milk and whisk vigorously.

Step 6

Drain clams and add juice to soup.

Step 7

Slowly bring to a boil, stirring often.

Step 8

Reduce heat to a simmer and add potatoes and seasonings; simmer 10 minutes.

Step 9

Add clams and simmer 8 minutes.

Step 10

Finish with heavy cream.

Step 11

Dont boil

Step 12

Season to taste.

Being a New Englander over here in the Northeast, we love our clam chowder and given that this recipe includes canned clams, I was surprised on the tasty results. I was in chowda heaven and I could have eaten 4 bowls! I did accidentally add the whole can (clams and juice) when I should have separated them as noted in the directions. Though the clams came out a bit chewy, the taste was great. I will though remember to follow the directions next time. Also added wee bit more flour to have it slightly thicker. Thanks so much, Dee, for sharing this yummy recipe.
