"I always have an abundance of raspberries in the summer months and this is one great way to put them to use. Note: I use my home-made raspberry jam, but you may use store bought or your own favorite preserves. Feel free to add raisins/craisins/nuts/seeds as desired."

Step by Step Method

Step 1

In a microwave safe dish mix together the brown sugar, oil, and honey.

Step 2

Bring to a boil. About 1 minute.

Step 3

Remove and add jam.

Step 4

In a large bowl combine oats, flax meal and the sugar/oil/raspberry mixture.

Step 5

Stir until oats are well coated and everything is combined.

Fabulous granola! I can't seem to stop munching on this. I will make it a little sweeter to my tastes next time, but that is easy to adjust. I used 3tbsp Splenda brown sugar blend, coconut oil, clover honey, raspberry preserves, and toasted blueberry flax meal. This smelled so fabulous while baking that I wanted to slather it on my body, but then I would be a sticky mess, so I'd settle for a candle with this scent! I really think using the coconut oil was key. I did overbake this by 5-10 minutes as my toddler distracted me when the timer went off...but it still seems fine. Freddy Cat says thanks for the munchies! Made for the Billboard recipe tag game.
