Step by Step Method
Step 1
Heat oil in a large saucepan over medium-high heat. Add squash and next 4 ingredients (squash through garlic); saute 4 minutes.
Step 2
Stir in broth, quinoa, and salt; bring to a boil.
Step 3
Cover, reduce heat, and simmer 20 minutes or until the liquid is absorbed.
Step 4
Add salt and pepper to your desired taste.
Step 5
Sprinkle top with thinly sliced green onions.
