Ingredients

  • 2 tablespoons oil (olive oil)
  • Butternut squash, coarsely chopped (as much as you want to use, peeled)
  • 2/3 cup red bell pepper, diced (seeded)
  • 1/3 cup yellow onion, finely chopped
  • 1/2 jalapeno pepper, finely chopped (seeded)
  • 2 cloves garlic, minced
  • 1 1/3 cup chicken broth
  • 1 cup dry quinoa
  • Kosher salt and pepper
  • Sliced green onions

How to Make

  • Step 1: Heat oil in a large saucepan over medium-high heat. Add squash and next 4 ingredients (squash through garlic); saute 4 minutes.

  • Step 2: Stir in broth, quinoa, and salt; bring to a boil.

  • Step 3: Cover, reduce heat, and simmer 20 minutes or until the liquid is absorbed.

  • Step 4: Add salt and pepper to your desired taste.

  • Step 5: Sprinkle top with thinly sliced green onions.
