"Came up with this a few years ago to use up leftover pork, and we really like it. Well, except for the fact that hubby won't touch a cooked tomato that he can actually see, so I have to use tomato sauce, which isn't nearly as good. Oh well, he's worth it :)"

Step by Step Method

Step 1

In heavy skillet, saute onion and garlic in oil and butter until translucent. Add garlic, paprika, pepper, tomatoes, wine and bouillon.

Step 2

Cook uncovered, keeping at a good simmer for about 15-20 minutes. Taste and adjust seasonings, add more wine if needed.

Step 3

Slice tenderloin into 1/2" slices and place in sauce. Flip right away so sauce is on top and bottom.

Step 4

Cover pan and cook until pork is heated through, which shouldn't take more than 3-4 minutes. Serve over wild rice.
