Step by Step Method

Step 1

Heat oil in a large saucepan over medium-high heat.

Step 2

Add onion, and cook 5 minutes, or until lightly browned, stirring frequently.

Step 3

Add coconut milk and broth. Whisk in tomato paste and curry powder. Bring to a boil.

Step 4

Add potatoes, reduce heat to medium, cover and cook 15 minutes, or until potatoes are still firm but almost done.

Step 5

Stir in green beans and cauliflower. Cover and cook 5 minutes more, or until vegetables are tender. Remove from heat.

Step 6

Stir in peas, cilantro and lime juice. Season to taste with salt, pepper and cayenne.

Step 7

Serve with basamati brown rice if desired.

Our vegetarian friend enjoyed this Curry as much as we did, so much so once again left with recipe in hand. It's a very appealing vegetable dish that makes for a company quality meal. I added lime juice and a mixture of cilantro and parsley. Served with Basmati rice and a garden salad - an excellent lunch. Can't wait to make this with garden fresh vegetables!

This is very good! I did add some Garam Masala for more depth of flavour. For us, I would cut down on the quantity of veggies so that there would be a wee bit more sauce. I agree with you about the coconut oil being a good oil! This dish came together quickly and easily. Will definately be making this again. Thank you Engrossed for sharing.
