"These cookies are fantastic! I have been making these cookies for quite awhile and they are always a big hit on my cookie trays, and in my Holiday gift giving tins. They are soft and delicious. I believe I got this cookie recipe from the Libby pumpkin site."

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Line baking sheets with parchment paper.

Step 3

In a large bowl, beat the butter, granulated sugar and brown sugar until creamy.

Step 4

Beat in the pumpkin, egg, and vanilla and mix until well blended.

Step 5

Add the flour, cinnamon, and baking soda and mix until incorporated.

Step 6

Stir in white chips and nuts.

Step 7

Drop by rounded Tablespoons onto the prepared baking sheets; flatten slightly with the back of a spoon or a greased bottom of glass that has been dipped in sugar.

Step 8

Bake for approximately 12-13 minutes or until cookie is set. Cool on baking sheets for a minute or so, and then remove to wire racks to cool completely.
