Step 1: Preheat oven to 350 degrees.
Step 2: Line baking sheets with parchment paper.
Step 3: In a large bowl, beat the butter, granulated sugar and brown sugar until creamy.
Step 4: Beat in the pumpkin, egg, and vanilla and mix until well blended.
Step 5: Add the flour, cinnamon, and baking soda and mix until incorporated.
Step 6: Stir in white chips and nuts.
Step 7: Drop by rounded Tablespoons onto the prepared baking sheets; flatten slightly with the back of a spoon or a greased bottom of glass that has been dipped in sugar.
Step 8: Bake for approximately 12-13 minutes or until cookie is set. Cool on baking sheets for a minute or so, and then remove to wire racks to cool completely.
