  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup butter, softened (2 sticks)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla
  • 2 cups white chocolate chips
  • 2/3 cup macadamia nuts, coarsely chopped

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Line baking sheets with parchment paper.

  • Step 3: In a large bowl, beat the butter, granulated sugar and brown sugar until creamy.

  • Step 4: Beat in the pumpkin, egg, and vanilla and mix until well blended.

  • Step 5: Add the flour, cinnamon, and baking soda and mix until incorporated.

  • Step 6: Stir in white chips and nuts.

  • Step 7: Drop by rounded Tablespoons onto the prepared baking sheets; flatten slightly with the back of a spoon or a greased bottom of glass that has been dipped in sugar.

  • Step 8: Bake for approximately 12-13 minutes or until cookie is set. Cool on baking sheets for a minute or so, and then remove to wire racks to cool completely.
