Step by Step Method

Step 1

Tomato: Heat oil and add onions, lightly season.

Step 2

Cook until translucent and add chili powder, tomatoes and creamed corn.

Step 3

Simmer for 15 minutes, stirring occasionally.

Step 4

Preheat oven to 350 degrees F.

Step 5

Meanwhile, combine eggs milk and cornmeal and whisk until combined.

Step 6

Temper with some of the tomato mixture.

Step 7

Add to tomato mixture, and stir constantly for 15 minutes until thickened.

Step 8

Add chicken and olives and season to taste.

Step 9

Pour into 9"x13" pam sprayed, greased casserole.

Step 10

Top with cheese.

Step 11

Bake 40 minutes until firmed up.
