"You can eat this chilled (iced) or I think they ate this warm. Also as they ate a bunch of soup in cups. I reworked the recipe because as written it made no sense to me."

Step by Step Method

Step 1

Heat onions and butter until opaque.

Step 2

Add tomato paste and flour.

Step 3

Cooked 5 minutes.

Step 4

Combine chopped tomatoes, onion, water, salt and pepper .

Step 5

Cook over medium heat for 5 more minutes.

Step 6

Then add the chicken broth and water.

Step 7

Stirring constantly, bring to boiling and cook for 20 minutes at a low simmer.

Step 8

Force mixture through a fine sieve or use a stick blender.

Step 9

(If eating warm add cream here).

Step 10

Chill several hours.

Step 11

Before serving, blend in cream.

I used sweet white rice flour in lieu of all purpose flour, to make this gluten free. I added a bit of fresh basil while adding the broth and I sprinkled a bit of fresh Parmesan cheese before serving this. It came out so creamy and delicious. This is a make again for sure.
