Ingredients

The ingredients are:
  • 4 tomatoes, peeled, seeded, coarsely chopped, large, ripe
  • 2 tablespoons butter ( I added to cook differently)
  • 1 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 1/4 cup water
  • 16 ounces heavy cream, chilled (1 cup)

How to Make

  • Step 1: Heat onions and butter until opaque.

  • Step 2: Add tomato paste and flour.

  • Step 3: Cooked 5 minutes.

  • Step 4: Combine chopped tomatoes, onion, water, salt and pepper .

  • Step 5: Cook over medium heat for 5 more minutes.

  • Step 6: Then add the chicken broth and water.

  • Step 7: Stirring constantly, bring to boiling and cook for 20 minutes at a low simmer.

  • Step 8: Force mixture through a fine sieve or use a stick blender.

  • Step 9: (If eating warm add cream here).

  • Step 10: Chill several hours.

  • Step 11: Before serving, blend in cream.
