Step by Step Method

Step 1

Peel and dice apples.

Step 2

Place in a large pot and cover with water.

Step 3

Boil on high heat until apples become mushy (about 10 minutes) then drain and mash .

Step 4

In a large bowl, whisk together egg yolks, sugar, melted butter, sour cream, milk, baking powder, vanilla, and flour.

Step 5

Fold apple mixture into pancake mixture until combined.

Step 6

On a large griddle, melt 2 tablespoons butter.

Step 7

Drop in scoops of batter and fry until golden on both sides .

Step 8

Serve with ham on top.
