Step 1: Peel and dice apples.

Step 3: Boil on high heat until apples become mushy (about 10 minutes) then drain and mash .
Step 4: In a large bowl, whisk together egg yolks, sugar, melted butter, sour cream, milk, baking powder, vanilla, and flour.
Step 5: Fold apple mixture into pancake mixture until combined.
Step 6: On a large griddle, melt 2 tablespoons butter.
Step 7: Drop in scoops of batter and fry until golden on both sides .
Step 8: Serve with ham on top.
