Step by Step Method

Step 1

Place prawns into a food processor and pulse until roughly chopped.

Step 2

Transfer to a bowl and add breadcrumbs, chives, rind and half the lemon juice then stir until combined, season and then stir until combined.

Shape mixture into 4 patties and lightly coat with flour and place onto a plate.

Step 4

Heat oil in a large frying pan over medium heat and add patties and cook for 3 minutes on each side or until golden and cooked through.

Step 5

Whisk mayonnaise and remaining lemon juice together in a bowl and season.

Step 6

Spread lemon mayonnaise over roll bases, then fill with lettuce, tomato, prawn patties, avocado and extra mayonnaise and finish with roll tops and serve with fries if desired.
