Step by Step Method

Step 1

Bring a large saucepan of lightly salted water to the boil, add the spaghetti, bring back to the boil and cook for 8 to 10 minutes, or until tender but still firm to the bite.

Step 2

Drain the pasta in a colander and return the pan to the heat and add the oil and heat over a medium-high heat and add the garlic and cook, stirring for 1 to 2 minutes until the garlic begins to soften and then add the chillies, courgettes and 1/2 teaspoon of salt and cook, stirring occasionally, until the zucchini are beginning to brown.

Step 3

Add the prawns and lime zest and juice to the pan and then add the spring onions and cook, stirring occasionally, until the prawns are pink and cooked through.

Step 4

Add the butter and the reserved spaghetti and cook, stirring, for 1 to 2 minutes until most of the liquid has evaporated.

Step 5

Serve immediately, garnished with fresh thyme sprigs, if like.

  • When choosing prawns, look for ones that are fresh and smell of the sea.
  • When selecting the chilli, adjust the amount depending on how spicy you want the dish to be.

  • Substitute shrimp for chicken: This substitution will make the dish more budget-friendly and will also provide a leaner source of protein.
  • Substitute zucchini for bell peppers: This substitution will add a different flavor to the dish and will also provide a different texture.

Vegetarian Version Substitute the prawns with an equal amount of diced mushrooms and add 1/2 cup of cooked chickpeas for extra protein. Cook the mushrooms and chickpeas together with the zucchini until the mushrooms are softened and the chickpeas are heated through.

Roasted Asparagus with Garlic: This dish is a great accompaniment to the Prawn & Chilli-Lime Spaghetti, as the asparagus adds a fresh and crunchy texture to the meal. It is also easy to make, as all you need to do is to toss asparagus with olive oil, garlic, salt, and pepper, and then roast for about 10 minutes in the oven.

Garlic-Roasted Potatoes: This dish is a great side to the Prawn & Chilli-Lime Spaghetti as it provides a savory, garlicky flavor and a crispy texture. Simply toss diced potatoes with olive oil, garlic, salt, and pepper, and then roast for about 25 minutes in the oven. This dish is a great way to add a flavorful and crunchy element to the meal.

Great spaghetti dish! I used just some red chilis which you can get everywhere, no idea what they are, there is not much choice here. We loved this very much, it's quick and easy and so flavourful. Thanks for posting! Made for FYC game on FFF
