Ingredients

The ingredients are:
  • 225 grams dry spaghetti pasta
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 to 4 red chillies (jalapeno recommended we used birds eye, deseeded and diced)
  • 350 grams zucchini, diced (1 zucchini)
  • 500 grams fresh shrimp (prawns, peeled and deveined)
  • 1 lime, whole (grated zest and juice of)
  • 1 to 2 spring onions (thinly sliced)
  • 2 tablespoons butter
  • Salt
  • Thyme sprigs, to garnish (optional)

How to Make

  • Step 1: Bring a large saucepan of lightly salted water to the boil, add the spaghetti, bring back to the boil and cook for 8 to 10 minutes, or until tender but still firm to the bite.

  • Step 2: Drain the pasta in a colander and return the pan to the heat and add the oil and heat over a medium-high heat and add the garlic and cook, stirring for 1 to 2 minutes until the garlic begins to soften and then add the chillies, courgettes and 1/2 teaspoon of salt and cook, stirring occasionally, until the zucchini are beginning to brown.

  • Step 3: Add the prawns and lime zest and juice to the pan and then add the spring onions and cook, stirring occasionally, until the prawns are pink and cooked through.

  • Step 4: Add the butter and the reserved spaghetti and cook, stirring, for 1 to 2 minutes until most of the liquid has evaporated.

  • Step 5: Serve immediately, garnished with fresh thyme sprigs, if like.
