Prawn & Chilli-Lime Spaghetti

"From a cookbook the DH gave me for my birthday with some modifications to suit our tastes. NOTE - most of the prep time is peeling and deveining the prawns buy them already done and save a heap of time."

Step 1

Bring a large saucepan of lightly salted water to the boil, add the spaghetti, bring back to the boil and cook for 8 to 10 minutes, or until tender but still firm to the bite.

Step 2

Drain the pasta in a colander and return the pan to the heat and add the oil and heat over a medium-high heat and add the garlic and cook, stirring for 1 to 2 minutes until the garlic begins to soften and then add the chillies, courgettes and 1/2 teaspoon of salt and cook, stirring occasionally, until the zucchini are beginning to brown.

Step 3

Add the prawns and lime zest and juice to the pan and then add the spring onions and cook, stirring occasionally, until the prawns are pink and cooked through.

Step 4

Add the butter and the reserved spaghetti and cook, stirring, for 1 to 2 minutes until most of the liquid has evaporated.

Step 5

Serve immediately, garnished with fresh thyme sprigs, if like.

I love one pot makes clean up so easy...we really enjoyed this had the heat from the peppers and tartness from the lime...I served it with garlic bread and dinner was done in no time...made for FYC tag game...

Great spaghetti dish! I used just some red chilis which you can get everywhere, no idea what they are, there is not much choice here. We loved this very much, it's quick and easy and so flavourful. Thanks for posting! Made for FYC game on FFF
