"This potato salad is vinegar-based and it has no mayonnaise. It is quick and easy to put together and the perfect amount for 2 people. I usually use 2 medium cooked potatoes but you can also use canned potatoes."

Step by Step Method
Step 1
Mix the potatoes, celery, bacon, and sliced white parts of the scallion, in a medium bowl. (The green parts will be for garnish)
Step 2
In a small bowl, whisk together the oil, vinegar, grainy mustard, salt, sugar, paprika, dill, and black pepper.
Step 3
Pour over the salad and stir to coat. Cover and refrigerate for at least an hour to allow the flavors to meld.
Step 4
Stir and garnish with the green part of the scallion.
