The ingredients are:
  • 8 ounces cooked diced potatoes (2 medium potatoes)
  • 2 tablespoons diced celery
  • 1 tablespoon crumbled cooked bacon
  • 1 thinly sliced scallion, white and green parts divided
  • Dressing
  • 1 1/2 tablespoon avocado oil
  • 1 tablespoon white vinegar
  • 1/2 tablespoon grainy mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon paprika
  • 1/8 teaspoon dried dill
  • 1/8 teaspoon ground black pepper

How to Make

  • Step 1: Mix the potatoes, celery, bacon, and sliced white parts of the scallion, in a medium bowl. (The green parts will be for garnish)

  • Step 2: In a small bowl, whisk together the oil, vinegar, grainy mustard, salt, sugar, paprika, dill, and black pepper.

  • Step 3: Pour over the salad and stir to coat. Cover and refrigerate for at least an hour to allow the flavors to meld.

  • Step 4: Stir and garnish with the green part of the scallion.
