"Luxembourg potato fritters called gromperekichelcher are crispy fritters made of grated potatoes, onions, shallots, and parsley, held together with some flour and eggs. Typically these are made flat, but when no one is looking you can use a tablespoon scooper and drop them in a deep fryer. They come out delicious that way, but to be authentic, they should be formed flat like a small pancake. They make a great side-dish or snack if that's what you want."

Step by Step Method

Step 1

Wash, peel and coarsely grate the potatoes

Step 2

Put them in a cloth to remove excess water by pressing it.

Step 3

Put them in a bowl

Step 4

Chop the parsley, shallots, and onions and mix them in. Add the beaten eggs, salt, and pepper to taste and finally mix in the flour.

Step 5

Heat the oil in a pan until very hot or you can use your deep fryer.

Step 6

Form the batter into flat cakes and fry them in the oil on both sides until golden brown.

Step 7

Remove and place on a paper towel to remove excess oil, serve warm

The German hubby loved these...they are so much like the German version...the only change that I noticed was the chopping of the onion instead of grating it...I serve it with a side of applesauce for him...delicious...made for "Only the Lonely" tag game...
