Portuguese sausage sandwiches with peppers, onions and olives

Step by Step Method
Step 1
In a skillet over medium high heat heat 2 tablespoons of the oil and then add the onions and saute for about 5 minutes or until softened. Add the peppers and saute another 5-10 minutes or until the peppers are browned. Sprinkle with the sugar and paprika and saute another minute. Using a slotted spoon, transfer mixture to plate but leave drippings in the skillet.
Step 2
Add another tablespoons to the skillet and then add the sausage and cook over medium heat and cook turning occasionally for about 5 minutes and then transfer the sausage to the plate with the vegetables.
Step 3
Add wine to the skillet and let it boil until reduced by half -- this will take 3-5 minutes. Return sausage and vegetables to skillet and stir in the olives and cook until heated through -- another few minutes.
Step 4
Place the baguette quarters on each of 4 plates and fill with the sausage mixture, spooning the juices over each serving.
