Ingredients

The ingredients are:
  • 3 tablespoons olive oil, divided
  • 2 onions, sliced
  • 3 bell peppers, sliced into strips (it is pretty if you use different colored bell peppers)
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika
  • 1 pound cooked sausage cut in half lengthwise and then crosswise into 6 inch pieces
  • 1 cup red wine
  • 2/3 cup kalamata olives, pitted
  • 1 baguette, halved lengthwise and then cut into quarters -- to make 4 sandwiches

How to Make

  • Step 1: In a skillet over medium high heat heat 2 tablespoons of the oil and then add the onions and saute for about 5 minutes or until softened. Add the peppers and saute another 5-10 minutes or until the peppers are browned. Sprinkle with the sugar and paprika and saute another minute. Using a slotted spoon, transfer mixture to plate but leave drippings in the skillet.

  • Step 2: Add another tablespoons to the skillet and then add the sausage and cook over medium heat and cook turning occasionally for about 5 minutes and then transfer the sausage to the plate with the vegetables.

  • Step 3: Add wine to the skillet and let it boil until reduced by half -- this will take 3-5 minutes. Return sausage and vegetables to skillet and stir in the olives and cook until heated through -- another few minutes.

  • Step 4: Place the baguette quarters on each of 4 plates and fill with the sausage mixture, spooning the juices over each serving.
