Step by Step Method
Step 1
Heat oil in dutch oven over medium high heat.
Step 2
Sprinkle pork with salt and pepper to taste.
Step 3
Brown on all sides in oil and transfer to plate.
Step 4
Melt butter in same pan.
Step 5
Add onions and cook until soft, about 4 minutes. Add the brown sugar

Cook stirring until onions begin to caramelize, another 4 minutes.
Step 7
Add the mustard and sauerkraut
Step 8
Stir until combined
Step 9
And then pour in the broths.
Step 10
Bring to a boil stirring to loosen any browned bits in the pan.
Step 11
Return the meat to pan.
Step 12
Cover and reduce heat and simmer until meat is tender , 4 hours. Making sure not to boil dry adding water as needed
